New research is exploring the possibility that fructan, not gluten, may be responsible for improved symptoms in patients with non-celiac gluten sensitivity. Fructan is a carbohydrate found in wheat. In a recent blinded study involving 59 individuals on self-imposed gluten-free diets, researchers found those who ingested fructan reported the most symptoms. “On average, the study also found no difference in reported symptoms between gluten and placebo groups”.

While these are fairly new findings, these results and further research may lead to better answers for those suffering from gastrointestinal upset.
